Californian Chicken en Croute
This is a simple dish to put together and really makes a great presentation. Serve it with some potatoes and steamed beans and some First Press Chardonnay
Ingredients:225g Buffalo Mozzarella, chopped
12 basil leaves, minced
20 sun-dried tomatoes, finely chopped
4 Chicken breasts
4 Pieces of puff pastry 15cm x 15cm 3mm thick
4 Tblsp melted butter
Preheat the oven to 400F
Mix the mozzarella, basil and sun-dried tomatoes together in bowl.
Cut a pocket in the each of the chicken breasts and stuff with the cheese and tomato mixture.
Place the stuffed breasts into the middle of each puff pastry square and roll up into parcels.
Pierce each parcel a couple of times with a fork and brush with butter.
Bake until Golden, Brown and Delicous.
