Cranberry & Pineapple Jell-O Salad
3 small packages (3 oz each) raspberry Jell-O
2 cups boiling water
16 ozs. fresh cranberries, ground
1 whole orange, peeled, seeded, finely chopped
1 1/2 cups sugar
1 cup celery,finely chopped
1 granny smith apple, finely chopped
1 cup crushed pineapple in its own juice (drain well and reserve juice)
1 cup pineapple juice (from the crushed pineapple)
1 cup chopped nuts
In a medium bowl, dissolve the Jell-O in the boiling water. Let cool.
Add all other ingredients to liquid Jell-O, mix very well. Place in one large mold or individual molds.
Let chill in refrigerator overnight until firm.
